Food for thought!

Cooking and I, we have a mixed history.  I'm not one of those people that loves to grocery shop for ingredients, read from books or watch cooking channels then cook something awesome. I don't really enjoy any part of it.  However,  in my quest to eat healthier and incorporate more veggies into my life, realized I'd have to cook in order to accomplish that goal (trying to be a full time vegan).


I kind of google what I want to make and then loosely follow the recipe and add or take away whatever I like. I know that's probably a silly approach, especially for someone who can't really cook well...but it works for me.

I enjoy making different salads, soups and homemade Indian food.. but I can't seem to wrap my heart around cooking.  It takes a lot of effort to buy every single ingredient, thats why I mostly choose easy 2-3 steps recipe. Few things I prepared in last few days are;

Regular oatmeal in hot water, added honey and strawberries and it come up really nice. Best breakfast after 50 minutes Yoga, quick and healthy.


Another one is, veggie-packed soup. I googled a soup recipe, shopped and picked up some of the ingredients that appealed to me and added some of my own favorite veggies. Prepared with Onion, Carrots, Tomato, Green Peas, Red Kidney Beans, potatoes etc.


Vegetarian Chickpea Sandwich Filling is the best so far, don't need to use potato all the times, I used some chickpea and onions, tomatoes, chopped lettuce and coriander leaves and little bit lemon juice. With Tofu slice, it taste like heaven.
